The widgets on your Simplifier instance are only overwritten, if you import (with the import file containing the respective widgets) and select the ‘overwrite’ option. A Simplifier version update does not change your Widgets, so the changes you made in the Widgets are not affected.

You are right, there are several header properties of Widgets that are not flagged as translatable.
